Each Shun Classic Ken Onion knife has an inner core of their famous VG-10 steel which makes for an exceptionally sharp and smooth blade. Then each blade is clad with 16 layers of stainless Damascus on each side. The ergonomics of these knives are unsurpassed. The contoured bolster naturally gives the thumb and forefinger a place to grip the knife offering superb control.
